Traditional Balsamic Vinegar of Modena PDO is a very special vinegar. Not produced from wine, as most vinegars, but from cooked juice (cooked must) of the typical grapes of Modena. Its distinctive characteristics are obtained through a slow natural vinegar fermentation of the cooked grape must, followed by long aging in a series of barrels made of different types of woods with a solera method.

Only the product approved and certified by an expert tasting commission can be qualified as TRADITIONAL BALSAMIC VINEGAR OF MODENA, and it is bottled in 100 ml bottles, compulsory for the PDO product, all sealed and numbered.
In the year 2000 Traditional balsamic vinegar of Modena has been recognized by the European Community as a protected origin designation (PDO). This means that the production must follow the old ancient methods and that all the production process and the finished product are certified by an official certification authority. Only the product approved and certified by an expert tasting commission can be qualified as TRADITIONAL BALSAMIC VINEGAR OF MODENA.
